Upside Down Pizza Bowl




1 cup chopped onions
1 cup chopped green bell peppers
1 cup chopped mushrooms
1 cup pizza sauce
2 cups shredded cheese
1 roll of frozen pizza dough

Saute all ingredients.  Cut dough into four equal pieces.   Grease 4 medium size ramekins or any oven proof small bowl.  Divide ingredients into four equal parts.  Place cheese, saute vegetables, 1/4 cup pizza sauce in the bowl .   Place rolled pizza dough on rim of bowl.  Bake at 425 degree oven for about 15- 20 minutes.  Invert the pizza bow unto a serving plater.


Note: You can use any size bowl you like.  You can use any topping you like.  I made my own pizza dough.   3 cups all-purpose flour, 1 cup water, 1 teaspoon salt, 1 teaspoon sugar, 2 1/2 teaspoon yeast, 3 tablespoon olive oil.  Place all ingredients in a bread machine and let the machine does all the work for you.  Just set machine in dough making mode.

CopyCat White Castle slider





Ingredients
1 1/2 pounds hamburger
1 package Lipton onion soup mix
1 tablespoon peanut butter
1/2 cup milk
1 onion, finely chopped
Sara Lee Classic Dinner Rolls 
Cheese slices  
 
Instructions
  • In a large bowl mix the hamburger, Lipton onion soup mix, peanut butter, and milk. Spread the meat mixture on a cookie sheet. Bake at 350 degrees for about 10 minutes. The meat will shrink. Take it out of the oven and put the diced onions all around the edges.  Bake for 15 more minutes, remove from oven, then spoon the onions from the edges all over the top of the meat and layer with cheese slices.
Note: You can use dehydrated onion, just soak them in water prior to baking.

Easy Massaman Curry


1 or 2 large potatoes cut in 3rds

1 large onion cut into 4ths or 4 small onions cut into halves

1/2 cup unsalted roasted peanuts

2 pounds of beef or chicken cut into cubes

3 t palm or white sugar

1 t tamarind paste or juice

 In a frying pan sauté heaping 1 tablespoon of curry paste with 1 tablespoon of cooking oil and add 1 cup of coconut milk.  In a large pot, cook coconut milk and meat of your choice until boil. Then add 1/2 cup water, potatoes, onion and  roasted unsalted peanuts cover bring to a boil and cook on low heat until meat is fork tender (1 hour for me).   Serve with white rice or French bread.

Note: To achieve the golden red grease, you must saute paste in cooking oil.   DO NOT use olive oil. It is not compatible in Asian cuisine.  I use Costco coconut oil.

Corned Beef Brisket Fritata



Ingredients :

8 eggs
 seasoning to taste - salt, pepper, herbs
 2 to 4 cups of chopped protein (chicken, meat, fish)
 2 to 4 cups of chopped vegetables

Directions :

 Preheat oven to 350'F
 Lightly grease 2 - 9 inch pie plates or 8 individual cups/large muffin tins
Whisk the eggs with your seasonings in a large bowl.
Distribute the chopped protein and vegetables evenly among the pie plates
Pour the egg mixture into the pie plates, making sure the protein and vegetables stay evenly distributed.  Bake for 20 minutes or until eggs are done.


Note: I will use corned beef brisket and left over potatoes and use whatever vegetables I have in my frige.

Corned Beef Brisket


1 head of cabbage cut into 4 wedges
1 lb  red or yukon  gold potatoes or any potatoes
4 celery stalks cut into 1 inch
4 carrots cut into 1 inch.
3 lbs corned beef brisket

Wash corned beef.   Place corned beef brisket  and seasonings in a large pot with water and add celery and carrots.  Bring water to a boil and cook on low-medium heat for 1 hour.   Add cabbage and potatoes and cook for another 30 minutes.   Slice the meat across the grain  and serve with garlic or soda bread.

Monte Cristo Sandwich





Monte Cristo  sandwich
1 ¾ cup flour
1 ¾ cup + 2 T water
2 t baking powder
1 egg
½ t salt


Mix all ingredients in a bowl.  Assemble your sandwich which includes: any meat and any cheese:  Dip your sandwich, drain excess batter and deep fry  on high heat for about 1 minute on each side.   Dust with powdered sugar and serve with raspberry jam. 

Note: Lower heat will absorb excess oil.

Low Country Boil


Easy Recipe for beginners
 
Potatoes
fresh corns

12 oz beer (optional alcohol will cook out)

3 T old bay seafood seasoning

1 stick celery

1 onion cut into fourths

¼ cup Crab boil seasoning

Squeeze the juice of 2 lemons and add the lemons.  No lime substitute
Smoked sausages


 Pour 2 gallons of water in a large pot and  add all ingredients (except sausages, corn, and seafoods) and simmer on low heat for 1 hour.     Add corns and sausages and cook for 10 minutes. Add seafoods last , and cook for 3 minutes.
 
Note: If cook whole potatoes, it will take longer adjust your cooking time.  Don't overcooked corns and shrimp.  Overcooked shrimps will taste like rubbers. 
 
 
 
 
More Advance Recipe and More Delicious and more spicy: 
 
2 tablespoons each of the seasonings:  lemon pepper seasoning, Paprika, Cajun seasoning, cayenne pepper, hot sauce and old bay seasoning.

½ stick butter

1T sugar

4 cloves of garlic

 

Sauté butter and garlic and sugar then add all spices.   Set aside.   Boil your seafoods in 1 gallon of water, add 1 lemon cut in 1/2 .  Cook shrimp or your favorite seafoods for about 3 minutes.   Then drain then toss seafoods to coat with butter seasoning sauce.

Easy Lasagna



1 jar or can of garlic roasted tomatoes sauce
2 cups of cheeses
1 bag of Ravioli



Pour 3 T of sauce on bottom of baking pan.   Layer with ravioli then sprinkle with cheese. Repeat layer.   If you want to add toppings, add the toppins prior to the final layer of cheese.  Bake 350 degree oven for 20 minutes.

I love fresh spinachs and mushrooms.  Delicious rich with iron.

Cinnamon Waffle Rolls




 


1 can of Pillsbury Cinnamon Rolls


Turn  your waffle iron on. Pop the canister open.   Place rolls on iron waffle close and cook until turn "ready light" comes on.  Depending how big your waffle iron is, that's how many you place your rolls.  Pour icing that come with it and serve.

Easy Enchiladas



1 box of Taquitos
1 can of enchilada sauce
1 cup of cheese

Pour 3 T of sauce to bottom of pan.   Layer taquitos, sauce, cheese and repeat process.  Add any topping you like.  I love black olives.  Bake at 350 degree for 15 minutes.

Salted Eggs





12 eggs
enough water to cover the eggs (maybe 1 liter)


glass jar
8 T salt

Bring water to a boil and then add salt.   Allow the water to cool prior to pouring over eggs.  Wash eggs and dry with paper towels.  Place eggs in a jar.   Pour water over eggs cover and refrigerate for 30 days.   Do not attemp to fry salted eggs.  It is only good boiled.  The yolk has creamy texture and goldern orange color.   It is very delicious.

Notes: Use with moon cakes, salads, or in any dish that calls for boiled eggs.

No Fuss Eclair


2   3 oz packages vanilla instant pudding
1 container of cool whip topping

3 cups of milk

1 box graham crackers

1 container of chocolate cake frosting

Mix pudding in 3 cups of cold milk, and then stir in cool whip.   Arrange crackers in 9 x 13  baking dish.  Spread pudding mixture and repeat layers.   Spread chocolate cake topping on top of the final layer and place in refrigerator for 4 hours.




East Meets West Chicken





1 cup orange juice concentrated
1 cup ketsup
2 T brown sugar
1 T vinegar
1 T  worcesterhire sauce
1 T  hot sauce

Place all ingredients in a sauce pan and simmer for 5 minutes, slightly reduced.  Bake your chicken at 475 degree until brown and cooked.   Place cooked chicken in a bowl and toss  untill all chickens are covered with BBQ sauce.   Return chicken back in the oven and cook for another 8 minutes sauce will bubble and caramelize.  

This is very addictive especially with chicken wings.

Asian BBQ

Asian BBQ

1 lb thinly slice beef
1/4 cup onion
4 cloves garlic crushed
1 slice ginger
1/2 cup asian pear (1/2 cup per 1 pound of meat)
1 green onions slice
3 inch carrots slice
2 T soy sauce
1 T brown sugar
ground black pepper
1 t sesame oil

Place onion, pear, ginger, garlic in a blender or food processor.   Blend to create puree.  Pour puree into meat, add the rest of the ingredients and marinate for 2 hours.   Grill as usual.

Note: For easy slicing, freeze meat for 10 minutes prior to slicing or just ask the butcher at the grocery market to do it for you.  No extra charge.  Asian pears are used as meat tenderizer.

Fried Rice



Easy Fried Rice

1 cup left over rice
1 cup left over vegetables  (chopped)
1 cup of beef or any meat
2 T oyster sauce or Soy Sauce
2 cloves garlic
1/4 onions
black pepers to taste for a better taste, try white peppers


Saute onions then garlic and meat, add rice, Oyster sauce and vegetables.   Stir until all ingredients are happy.

Crunchy Chicken Wings with Roasted Peanuts




3-4 pounds chicken wings
4 cups cooking oil for frying

Sauce:
4 cloves garlic
2 T cooking oil
3 dried chili peppers (remove seeds) cut 1 inch piece.
¼ cup soy sauce
1 T  vinegar
1 T mustard sauce
1 T brown sugar

Garnish: roasted peanuts


Wash chickens and pat dry. Coat chicken wings with corn starch.   Deep fry chicken about 375 degree for 12 minutes.  Repeat frying process until all wings are fried.   Fry the wings for the 2nd time until brown and crispy.  For the sauce: saute chopped garlic with 2 Tablespoon of cooking oil, and add dried chili,  soy sauce, sugar, vinegar, mustard.  ADD fried chicken wings and unsalted roasted peanuts and toss to coat with sauce.

For chili, the larger the size, the less heat it has.  I chose medium size.

Note: Please don't skip 2nd fry, it will not have the crunchy and crispiness.

40 Cloves Garlic Chicken





3-4 pounds of whole chicken
2 sprigs of tyme
Butter
Salt

Wash chicken and dry it.  Chicken must be very dry prior to rubbing butter on chicken.   Rub enough butter to your liking and sprinkle with coarse salt.   Place chicken in a bake dish or cast iron pan add garlics and tymes.  Bake at 475 for 45-60 minutes.

Note: I rubbed lots of butter on my chicken.  I use lots of tymes.

Easy Crepe







1 1/2 cup whole milk
4 eggs
1 cup all-purpose flour
1 T sugar
1/4 t salt
3 T melted unsalted butter

Pace all ingredients in a blender and blend for 1 minute.   I use the Magic Bullet.   Allow the batter to rest for 30 minutes before cooking.    Pour 1/4-1/2   cup batter into buttered or oiled heating pan and swirl to coat bottom of pan.  Fry until you see edges dried and curled up slightly.   Flip crepe over  and cook the other side for 10 seconds.   Keep frying all crepes until batters are finished.


Note: Use crepes for many dishes, from sweet to savory.  Use larger amount for bigger crepe.
