Pad Thai Sauce







Pad Thai Sauce:
1 1/2 cup palm sugar or brown sugar
1 cup white sugar

1 cup concentrated tamarind juice or make your own from tamarind pods
1 cup fish sauce

Place all ingredients in a sauce pan and simmer for 5 minutes.   After it cools down, pour in glass jar and refrigerate for later use.

How to make tamarind sauce: 5 tamarind pods 1 cup hot water let it dissolve, strain and discard pulp.
