Chicken Soup for Dummies



1 whole chicken
Water
2  pieces ginger (2 quarters size)
½ stalk lemon grass (slices)

Wash chicken and place in big pot.  Pour enough water to cover the chicken.   Add gingers and lemon grass pieces and bring to a boil.   Reduce heat to low-medium and allow to simmer for 1 hour.   Add chicken bouillon or  pho seasonings to the soup. Turn off the heat and add chop up bok choys, green mustard lettuce, green onions.  Don't worry the residual heat will cook the greens. Serve with white rice or  noodles. Garnish with cilantro.
